We recieve durum wheat semolina, our main ingredient, in excellent organic quality from an Italian mill near Florence. Thus we avoid long transports from overseas and keep our carbon footprint as low as possible. Unfortunately, it is not possible to purchase durum wheat semolina from regional providers in Germany, as it is not yet offered in the required quantities. However, our spelt flour is purchased from Meyermühle in Landshut, Germany.
If we are looking for new suppliers, we first examine the quality of the raw material. Afterwards, it is tested in a first production run before we decide whether the new material is adequate to be used for our fresh pasta or not.
Our organic pasta is produced exclusively in Germany, based on original Italian family recipes. To minimise our carbon footprint, we avoid long transport routes and produce as ressource-efficient and sustainable as possible. We offer vegetarian, vegan as well as gluten-free pasta.
